There’s something about the scent of lavender that instantly slows me down. It might be the calm it brings, or the way it takes me back to my summer lavender obsession - which began with a trip to a lavender farm and ended with lavender lattes around a campfire.

Last month, a friend took me to Many Oaks Lavender Farm in Shingle Springs, California. Not only was the scenery stunning, but I also learned what to look for when buying or growing culinary lavender (yes, there’s a difference!).
Lavender comes in two basic types: ornamental lavender and culinary lavender. Ornamental types for decoration and essential oils would include French lavender (Lavandula stoechas), and Spanish lavender (Lavandula stoechas subsp. pedunculata). Culinary lavender like English lavender (Lavandula angustifolia), is safe for cooking and has a sweet, floral flavor for its flavor.

Inspired, I went home and whipped up my own lavender syrup, which I then used for everything from lemonade to sparkling water to morning coffee.
And yes, I even packed that syrup for our family camping trip. Because let’s be honest: what’s a camping experience without a proper lavender latte to sip while the sun rises? And when it got hot, I pulled out the organic lemonade, ice bucket, and more lavender syrup to make lavender lemonades.

1 cup granulated sugar (experiment with monk fruit for a Keto-friendly alternative!)

2 tablespoons dried culinary lavender buds
Instructions:

In a small saucepan, combine water, sugar, and lavender buds.

Bring to a simmer, stirring until the sugar dissolves.

Let it steep for 15–20 minutes off heat.

Strain out the lavender buds and pour into a glass jar.

Store in the fridge for up to 2 weeks.
